Nutrition, Master of Science

Mansfield University’s Master of Science in Nutrition program provides an innovative, integrated study of nutrition and health.  The program assists dietitians and others considering advanced study in nutrition in meeting professional requirements for completing a master’s degree.  This online program format provides a supportive, flexible pathway to advanced degree completion.  Students can complete the program in two years by taking two courses per semester or in four years by taking one course per semester.  A culminating capstone project is required for graduation.  The program must be completed in five years.  Completion of this degree program does not qualify a student to take the RD examination.

The mission of the Mansfield University nutrition program is to prepare advanced level practitioners with the leadership skills, knowledge, and professional skills required for future practice.

The MU nutrition programs will produce graduates who are recognized for their excellence in empowering their patients, clients, employees, and communities to improve their nutritional status.

Program Goals

  • Prepare competent nutrition professionals for advanced level careers in nutrition.
  • Prepare students for leadership roles, professionalism, and a commitment to lifelong learning in nutrition-related fields.

Student Learning Outcomes:

  • Apply theories and models of community health, nutrition communication, and adult learning theories to provision of nutrition services.
  • Assess leadership models and personal leadership styles and apply them to nutrition services management
  • Apply current strategies and practices in entrepreneurial nutrition to solve problems and address issues in the profession.
  • Compare and contrast the use of qualitative and quantitative research methodology in identifying evidence based interventions for groups and individuals as necessary based on selection of a project or thesis culminating experience
  • Demonstrate a high level of professionalism and ethical decision making.

Admission prerequisites for ALL students admitted to the MS in Nutrition program

  • 3.0 or higher cumulative GPA on 4.0 scale
  • Official transcripts of all undergraduate and graduate work completed at any institution
  • Completion of the following courses prior to enrolling in this advanced degree program:
    • CHM 1101 Introduction to Chemistry
    • CHM 1102 Inorganic and Organic Chemistry
    • CHM 2201 Introduction to Biochemistry
    • BSC 1121 & BSC 1122 Anatomy and Physiology I & II
    • NTR 2211 Introduction to Nutrition
    • NTR 3314 Life-Cycle Nutrition
    • NTR 3316 Community Nutrition
    • at least one Medical Nutrition Therapy course, such as NTR 4401 Medical Nutrition Therapy I
  • Two letters of recommendation; one professional and one academic preferred to speak to applicant’s academic, writing, and critical thinking abilities as well as applicant’s motivation to achieve the MS degree.
  • Application fee of $25
  • If GPA is 2.8 to 2.999, then the applicant may be considered for provisional acceptance.
  • Students provisionally admitted into the MS in Nutrition program will be expected to take and successfully complete six graduate credits by advisement before formal admission to the program.
